Bad Meat: The Scandal of Our Food Safety System

The author questions the food safety rules of the U.S., which was brought about by the mass recall of almost 19 million pounds of tainted beef potentially contaminated with E. coli O157:H7 by ConAgra. The U.S. Department of Agriculture conducts random tests for E. coli at wholesale and retail locations, but not at the slaughterhouses where the meat is usually contaminated. The author said that the country's food safety system has been designed not to protect the public health but to protect the meatpacking industry from liability.
