The article presents information related to consumer protection. In New York City both Grade A and Grade B must have at least 3 per cent of butter fat. There is often a little more safety in Grade A milk. In New York City certified milk, after pasteurization, must not contain more than 10,000 bacteria per cubic centimeter. Canners in the U.S. often have to print two sets of labels because the label that passes at home isn't accepted in Canada. In Canada the label must tell all, in the U.S. it need tell mighty little. Canada has strict labeling laws. Canned fruits, vegetables, honey, maple syrup, eggs, fresh fruits, and fresh vegetables have to be marked for quality.
